Easy to make No-Bake Energy Balls

Happy Sunday! Today I thought I would share a quick and easy recipe for “In the Kitchen with D’Arcy” I don’t know about you, but I love a good recipe that could be made fast, has a ton of flavor, is healthy, and that my family will gobble up.
These easy-to-make, No-Bake, Energy Balls are all of that and more. It takes about 10 mins to make. I add Chia seeds to mine for extra fiber. (Important to add more fiber when you are a midlifer). I have found we like Trader Joe’s Chia and Flax seeds. I shared a fun “How to Reel” on Instagram.


Easy to make No-Bake Energy Balls
2 cups rolled oats
1 cup chocolate chips ( we like dark Chocolate)
1 cup ground flax seeds
1/2 cup Chia seeds
1 cup peanut butter (smooth or chunky)
1/2 cup honey or maple syrup
One tablespoon vanilla extract
Combine all ingredients in a bowl: Form into 1 inch balls with hands or a small ice cream scoop.
Arrange on a baking sheet lined with parchment paper, and freeze until set (about 1hour)
For an extra touch, you can dip in Chocolate.
For simple Chocolate
Melt 1 cup chocolate chips and 1/2 cup of butter in the microwave and stir.
Dip 1/2 of a ball into….
We like Trader Joe’s Flaxseed and Chia seeds.
Storage in an airtight container
