Easy Red Onion & Apple Salad Recipe
Hello, pretty ladies,
I hope you’re having a great weekend. Ben and I have been spending Spring break week in Las Vegas, trying to catch some sun and pool time. I’ll be doing a little Las Vegas travel guide next on the blog, so stay tuned. Today, being Sunday means “In the Kitchen with D’Arcy” Sunday recipe. Today’s recipe is an “Easy Red Onion & Apple Salad Recipe.”
It is perfectly served as a main dish with Garlic Bread or as a side dish with an Italian meal of meatballs and Caprese.
Easy Red Onion & Apple Salad
Buca’s Salad is so yummy we dissected it and came up with the ingredients we think they use. If you love their Salad, I think you’ll love this one too.
Ingredients For Salad:
2 Heads Romain Lettuce chopped
1 Bag of Salad mix
3 Apples (honey crisp) or Granny Smith chopped
1 Red Onion sliced
2 cups of dried cranberries
1 1/2 cups Candied Walnuts or pecans
2 Cups Gorgonzola or Feta Cheese crumbles
Add All salad ingredients to a large wooden bowl and toss
A great option is to add grilled chicken for a yummy and filling meal on its own.
Salad Dressing:
Mustard Vinaigrette
One clove garlic
¼ red onion
Two teaspoons of Dijon mustard
One teaspoon oregano
⅓ cup apple cider vinegar
½ cup olive oil, salt and pepper to taste
Add All Vinaigrette ingredients and whisk together. Then, toss over the Salad.
