Turkey stew and dumplings
Have leftover Turkey?
A yummy twist on Chicken pot pie; if you have leftover stuffing, top stew with stuffing. Bake. Or a more manageable option than making dumplings, cover with Pillsbury biscuits or croissants—even a pie crust. I love that you can get creative with this recipe and use what you have from holiday meals.
Turkey Stew Recipe:
Leftover turkey cut up into cubes (or shredded) I had about two cups left over
1 16ox chicken/turkey or vegetable broth
2 cups water
2 potatoes chopped /cubed
1 cup carrots
1 cup celery
One cup onion
1 cup of peas
1 pack of turkey gravy
One bay leave
One chicken bouillon cube
1/2 teaspoon pepper
Salt to taste
1/2 teaspoon garlic powder
1 tablespoon parsley
1/2 cup heavy cream
3 tablespoons flour (save for later)
Add all ingredients except flour!
Stovetop: Simmer on low or in the crockpot. When hot, whisk in 3 tablespoons of flour to thicken.
Topping variations:
Turkey stew & Dumplings.
Cook on stove Top: Add your dumplings to the top once thickened and let simmer until cooked.
I like our dumplings cooked more. I use the method below, as I do for covering them with biscuits or stuffing. You could even use a pie crust for a turkey pot pie.
If using Biscuits or stuffing, once the stew thickens, Turn it off and oil a 9×13 baking dish. Add the Turkey Stew, top with biscuits or leftover stuffing, and bake until the top is golden brown.
