Apple Cinnamon Crumb Cake Muffin Recipe- The apple and coffee cake lovers will love this recipe, perfect for a morning or afternoon snack. This has been a longtime favorite in our home, and I know your family will love them too. 

Apple Cinnamon Crumb Cake Muffins 

These apple cinnamon Crumb Cake muffins are an easy treat to make. Perfect when you have an abundance of fall apples! I love Honeycrisp apples. You can also use a variety of apples, from tart Granny Smith to sweet Honeycrisp or Gala, for a well-rounded flavor. The Apple Cinnamon Crumb gives these muffins a coffee cake vibe and is like a Strudel topping.

Ingredients

Apple Muffins:

• 1 ¾  cups all-purpose flour 
• ¾ cup white sugar
• 2 teaspoons baking powder
• 1 teaspoon ground cinnamon
• ½ teaspoon salt
• 1 large egg
• ⅓ cup coconut oil
• ⅓ cup milk
• 2 medium apples – peeled, cored, and chopped (I can my apples every year, making this step easy)

Topping:

• ½ cup white sugar
• 1/2 brown sugar
• ½ cup all-purpose flour
• 1⁄3 cup butter, cubed
• 1 ½ teaspoons ground cinnamon
• 1 tablespoon milk

Directions

Step 1

1. Gather the ingredients. Preheat the oven to 425 degrees F (220 degrees C). Line 6 large (3½-inch) muffin cups with paper muffin liners.. p-The baking temperate was increased to 425 degrees F for the first 5 minutes to help create a domed, bakery-style top.

Step 2

To make the muffins: Stir together the flour, sugar, baking powder, cinnamon, and salt in a large bowl. Mix in egg, oil, and milk until just combined. Fold in chopped apples.

Step 3

Spoon ½ cup of batter into each muffin liner ( I use a cookie scoop) 

Step 4

To make the streusel topping: Place sugar, flour, butter, and cinnamon in a small bowl; mash with a fork until the mixture begins to cling together. Sprinkle topping evenly over unbaked muffins (I do like to push a little into the muffin)

Step 5

Bake in the preheated oven for 5 minutes. Reduce oven temperature to 350 degrees F and bake until a toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes. Let cool in pan briefly; remove muffins and cool on a wire rack.
