The Best Carrot Cake Recipe

Hello Pretty Ladies,

Happy April and Sunday, my friends. I am sure you have figured out I share a recipe on Sundays. Are you a carrot cake lover? I have the best carrot cake recipe that is tried and true. This is a recipe I have made for years and family approved. Do you want a cake that is such good people ask you to make it for them? This is the one my hubby asks him to make him. This is the cake I make for his Birthday.

This Carrot cake is perfect for Easter; it can be made into cupcakes, two loave pans, a bunt pan, two rounds, or one square. So, you can get creative and decide which look you’d like to have for serving.

Ben and I have tried many carrot cakes, and only one has come close to this recipe; trust me when I say, My carrot cake recipe is so good. I know you’re going to love it.

I created a REEL you might want to watch.

Carrot Cake Recipe:

Ingredients:

2 Cups Flour

2 Cups Sugar

1 1/3 C Vegetable Oil

4 Eggs

4 Cups Grated Carrots (Tip: the bag of Shredded carrots at the market is 4 cups)

2 Teaspoons Cinnamon

1/2 Teaspoon Salt

2 Teaspoon Baking Powder

1 Teaspoon Vanilla

3/4 Cup Walnuts. (1/2 cup extra , chopped to garnish if you wish)

2 Teaspoon Baking Soda

In A Mixing Bowl

Preheat oven 350. Beat Sugar, eggs, and vanilla, and add oil until thick. Add in flour, baking powder, soda, salt, and cinnamon. Fold in Carrots and walnuts. Pour in the greased pan or pans of choice. Bake at 350 for 30-40 minutes, depending on the oven.

Cream Cheese Frosting:

8oz Cream Cheese

One Stick/Cube of Butter

1 Tablespoon Vanilla

1 Box of Powder Sugar ( you won’t use the whole box) I use 3 cups

*Double the frosting recipe if using a bunt pan, two round pans, or two loaf pans.

In A Mixing Bowl

In a mixing bowl, beat Cream cheese and butter until light; add Vanilla, then add Sugar to taste while mixing. (Sugar is to taste as some like it sweeter than others.)

Frosting The Cake

Let the cake or cakes cool on a cooling rack. Once cool, flip on a plate to remove it from the pan. Once completely cool on a plate, use a frosting spatula, and frost the cake. Embellish cake with chopped walnuts or carrot shavings. If you are good at decorating, add little carrots.

Binge-Worthy shows

If you want a couple of binge-worthy shows, I just finished Genny & Georgia on Netflix Crazy, what kids are going through and what a mom will do for her kids. If you like a murder mystery and suspense, YOU Is a pretty crazy show with twists and turns. In the 1st & the 4th season, we’re the best. Unfortunately, 2nd and the 3rd felt a little like serial killers!

If you love fashion and haven’t seen Mrs. Harris goes to Paris♥️ It’s a must! About a maid who sets her eyes on A Dior gown and saves and saves on purchasing a custom-made Dior gown at the house of Dior in the 1950s.

5 Ingredient Easy Chocolate Covered Strawberries

Hello Pretty Ladies,

I hope you’re having a beautiful Sunday. Someone keeps shaking the snow globe we seem to be living in, in Utah. I am quiet over winter and ready for sunshine, green grass, and flowers.

Yesterday was our youngest son’s 20th birthday. So naturally, Hampton requested chocolate-covered strawberries as dessert; I had to oblige. Thank goodness his birthday is when strawberries are in season; at least, when we lived in California, they were. We’re lucky our grocery store carries California strawberries, and they happened to have large ones. The larger ones are more fun to dip and have for a main dessert.

I thought you might like to know how I whipped up a batch of chocolate-covered strawberries, in case you haven’t tried making them yourself. You can also watch the REEL I created, So easy and yummy. If you are a home baker like me or just starting, check out the baking list on my Amazon Shops.

5 Ingredient Easy Chocolate Covered Strawberries

Recipe

-Strawberries ( I like good size ones)

1 1/2 Cups chocolate chips
1/2 Cup White Chocolate Chips
2 Tbs butter
3 Tbs olive oil

Wash strawberries and lay them out to dry (they must be dry to dip)

In 2 small glass bowls, add chocolate chips in one and white chocolate chips in the other.

Line cookie sheet with wax paper

In chocolate chip, add 1 Tbs Butter & 2 TBS olive oil

Warm in microwave for 30 seconds, stir and repeat until chocolate is smooth, & melted, and silky looking, Working quickly, dip strawberries and lay them on a cookie sheet. When all strawberries are dipped. You’ll now decorate with white chocolate.

You’ll make the white chocolate the same way as the Regular Chocolate. (Just a smaller amount)

1/2 cup white chocolate, 1 TBS Butter, and Oil. Melt

And if you have a piping bag, you can create pretty white lines. I didn’t have a bag, So I drizzled the white chocolate on the berries. With a spoon.

TIP:

You could also drip the chocolate-covered berries in mini chocolate chips, nuts, or toffee bits.

Dipping Strawberries Size Tip

Using medium or small-sized strawberries to dip works excellent on Charcuteries boards and as a decoration on another dessert and is superior to garnishing a smoothie or cocktail. Large Strawberries make a great main dessert.

Mixed Chocolate Chip Cookies You’ve Gotta Try

Happy Sunday, pretty ladies!

The first day of Spring is tomorrow, and it doesn’t look like the weather in Utah will cooperate. More snow in our forecast.

I was able to catch a little sunshine in St. George this last week, while on a much-needed girl’s trip with my mom. Although not warm, it was nice to see the sun. Catch a little peek at our Trip Here.

Mixed Chocolate 🍪 Chocolate Chip cookies🍪🍪🍪

Recipe:

3/4 cup softened butter

1/2 cup granulated sugar

1 Cup light brown sugar, packet

2 AA large eggs

1 tbsp Vanilla Extract

1 tsp baking soda

1/2 tsp salt

2 cups all-purpose flour

1 cup dark chocolate chips

1 cup milk chocolate chips

Optional:

1 cup chopped nuts

Tip:

Sprinkle with Sea salt right when removed from the oven.

Preheat oven 375

Combine butter, sugar, and brown sugar in a medium bowl. Blend with a mixer until smooth. Add eggs and vanilla extract. Mix thoroughly with an electric mixer on med speed. Add baking soda and salt. Slowly add flour until thoroughly blended. Fold in Kirkland signature chocolate chips and chopped nuts (optional) with a spatula.

Drop by the spoonful (I like ice cream scoop) onto ungreased baking sheets. Bake at 375• for 9-12 minutes, depending on your desired texture.

Makes about 4 dozen cookies

Tip:

Use parchment paper to line your baking sheets.

Here’s a great Hydrating & added Fiber Mocktail recipe using Liquid IV that tastes yummy, adds extra fiber to your diet and helps Hydrate your skin. “Drinking water is like washing out your insides.”

🍋🥒Hydrate & fiber water recipe:

-Water Pitcher

-Cocktail shaker

-Water

-Juice of 1 lime

Easy Stuffed Potato Skin Recipe

Hello Pretty ladies,

I hope you have a beautiful Sunday. Hopping on the blog for a short recipe share. I hope you’ll enjoy this week’s fast, easy stuffed potato skins, perfect for Superbowl Sunday or makes a great dinner served with a salad. I created a how-to reel for my Sunday series “In the Kitchen with D’Arcy.” Watch it HERE

The Super Bowl is fast approaching… Here’s one of my guys, Favorite football snacks✔️

Easy Stuffed Potato skins:

-10-12 Potato cooked cut in 1/2

-1 pound of Ground meat of choice (Beef, Turkey or Chicken) Seasoned the way you like

-2 Cups Mix Shredded Cheese

– Cooked Bacon crumbled

-1/2 cube melted butter

– 1 Cup green onions

– Salt and Pepper to taste

Cook potatoes in the oven or Microwave (I like to do this the day before) Makes putting together skins quick.

Cut in half and scoop out centers in a bowl (save to make mashed potatoes or Potato soup at a later date). Lay on sprayed baking sheet

-Brown and season your meat of choice.

-Coat each potato with melted butter and salt and pepper to taste

-Fill potato 1/2 way with meat, then layer shredded cheese. Top with bacon & green onions and bake in the oven at 350 until cheese is melted (15-20 min depending on range)

Serve on a platter with sour cream, Hot sauce, and Ketchup

This is an excellent Meal on its own, served with a salad.

Cheaters Homemade Garlic Bread

Hello, Pretty ladies.

Today’s Sunday recipe is one of my Family’s all-time favorite garlic bread! I shared a little of their reaction below. I hope you try this recipe, and let me know in the comments. Have a great Sunday.

Cheaters Homemade Garlic Bread! This is so dang good I have to make two loaves for this Family of 7!

Garlic Bread Recipe:

Loaf Rhodes Frozen Bread

One cube butter

One tablespoon of minced garlic

Tablespoon (1) Garlic Seasoning

1/2 Teaspoon Italian Seasoning

NOTE: This Bread is not for someone on a diet

How to:

First, Place the frozen loaf on a cooking sheet lined with parchment paper, and cover it with a linen dishtowel.

(or cheesecloth) let rise. (follow directions on the bag) Bread rising usually takes ALL day. I’ll get this ready at about 9:00 am to make for dinner around 6:00 pm. When risen, bake at 350 until golden brown. (follow the directions on the packaging.) While Bread is baking, melt a cube of butter in the microwave, then add garlic and seasoning and mix.

When the Bread is out of the oven, brush on a heavy coating of the Butter mixture. Let excellent for about 10-15 minutes slice (Bread will still be warm and will sink, it’s ok), then coat each piece with more butter mixture. Serve hot and almost gooey.

Family’s reaction:

This Bread is a family favorite, and when my family sees it on the counter in the morning, they jump for joy. They’ll eat two whole loaves; if I made three, that would get eaten too. It’s so rich, soaked in butter and garlic. It’s heavenly! I serve this Bread with soups, Pasta, and even salads. If you watch my stories, and I hope you do, you’ve seen me make it several times while staying at home was in place. ( heck, probably one of the reasons I’ve gained 10 pounds!)

How did it get its name? Well…Cheaters because, well, you cheating and not making the loaf from scratch! Nobody’s got time for that! Insert Giggle! Hence, I named it My Cheater’s homemade garlic bread.

How to Make Easy Creamy Garlic Mushroom Pasta

Hello pretty Ladies,

Today’s Sunday Dinner recipe for my series on Instagram, “In the Kitchen with D’Arcy.” It is A delicious and easy Creamy garlic mushroom pasta. View the Video Here. If your family is anything like mine, they love a good pasta dish, and this one is rich and delicious, with great flavor. It’s also very easy to make, yet it tastes like you’ve been slaving in the kitchen for hours. I like to serve it with a fresh green salad and garlic bread. Enjoy

How to Make Easy Creamy Garlic Mushroom Pasta🍝

Sauce Recipe:

1 cube butter

1 Tablespoon Minced Garlic

1/2 cup diced onions

2 baskets of Mushrooms (I like to mix two mushrooms of choice)

2 cups heavy cream

Romano cheese

Parmesan cheese

Asiago cheese

2 teaspoons Italian seasoning

Salt and pepper to taste

1/2 cup of White wine (if you wish)

Freshly cooked bacon crumbles

Start by sautéing onions with garlic in butter over medium-high heat. Cook them until translucent, and then add the mushrooms. Season everything with salt, and black pepper, then cook until the mushroom has reduced in size and become golden brown. (Add 1/2 cup of wine if you wish)

Next, add cream and cook until the liquid is

Creamy After, add the cheeses, 1 at a time, and lower the heat to medium. Simmer the sauce for 3- 5 minutes or until the cheeses are melted.
